In 1840 Jean Febvre, a barrel cooper from Montbard, founded the winery which is now Maison Simonnet-Febvre. Today it remains one of the oldest and most traditional Chablis producers in the region. As well as producing top-quality Grand Cru and Premier Cru Chablis, it makes regional wines such as Côte d'Auxerre and Irancy, and remains the only house in Chablis to produce the regional sparkling wine, Crémant de Bourgogne.
Maison Louis Latour bought the company in 2003, along with a small domaine of Grand Cru, Premier Cru and Chablis vineyards. Jean-Philippe Archambaud joined as its winemaker the following year. Before he arrived in Chablis, Jean-Philippe worked for Michel Chapoutier both in France and Australia. Since his arrival the wine and packaging have been given a ‘makeover’ and the company has moved to a new winery just outside Chablis, near the village of Chitry.
This wine combines the crisp, elegant green apple flavours of the Loire valley, with the vineyards less then 50km from Sancerre, with the minerally characters of Chablis. A crisp, clean, flinty white wine that is a perfect accompaniment with fish dishes. A delicious, tightly-knit and food-friendly Sauvignon Blanc which represents excellent value.

Tasting Note: Aged for almost three years this delightful salmon pink with sparkling wine has delicate aromas of raspberry and vanilla. The palate Is rounded with a fine mousse, fresh acidity and pretty bramble and fruity wild strawberries which linger on the finish.
This house remains the only one in Chablis to produce sparkling wine.
